Mark Ryan The Dissident 2017Some of Washington State's finest vineyards have provided fruit for the 2017 Dissident. Cabernet Sauvignon from Ciel du Cheval, Phinny Hill, and Quintessence and merlot from Klipsun and Red Willow are the foundation of this wine. The Dissident is a wine that we create to complement the Dead Horse and Long Haul. People often think that the Dissident is made up of wines that don't make the cut in the final blends of the Dead Horse and Long Haul. This couldn't be further from the truth. The same vineyards, barrels and attention to detail go into crafting the Dissident as go into every other wine in the Mark Ryan program. While the Dead Horse and Long Haul are crafted to be supremely ageable the Dissident is built to over a more approachable wine younger in its development. The fruit was hand harvested between September 8th and October 16th 2017. The wine was fermented in 1.5, 2 and 5 ton open top fermentors for 7-10 days. Great care is taken in the cellar to handle the must gently; it is never pumped and is gently punched down twice a day. The wine is lightly pressed to barrel where it finishes primary and secondary fermentation and is aged for 18 months in 60% new French oak. The wine was racked three times and gently fined prior to bottling.

Tito's Handmade Vodka 1LTito's Handmade Vodka is designed to be savored by spirit connoisseurs. It is micro-distilled in an old-fashioned pot still, just like fine single malt scotches and high-end French cognacs. This time-honored method of distillation requires more skill and effort than modern column stills, but it's well worth it. Our handcrafted technique offers more control over the distillation process, resulting in a spectacularly clean product of incomparable excellence. Only the heart of the run, "the nectar" is taken, leaving behind residual higher and lower alcohols. The vodka is cleansed of phenols, esters, congeners and organic acids by filtering it through the finest activated carbon available. Tito's Handmade Vodka is produced in Austin at Texas' first and only legal distillery. It's made in small batches in an old fashioned pot still by Tito Beveridge (actual name), a 41-year-old Geologist, and distilled six times.
