The 2021 Chablis Vau de Vey 1er Cru, which I tasted last year, has evolved on the nose. It is less flinty, with more fruit concentration, just a hint of wild peaches and yellow plums. The palate is very well-balanced with a superb line of acidity, that lemongrass tincture now toned down, engendering a more harmonious and poised Premier Cru. Fine persistence on the finish. Excellent.
